And just like that, Christmas is over. How was your celebration? Are you feeling those post holiday blues or ready to move on to New Years Eve?
I’m in that post-holiday-what-day-is-it-and-what-should-I-be-doing stage. It’s been wonderful spending time with family and friends who are back in town, and tonight the festivities continue with an annual cousins gathering – complete with pizza!
I’m obsessed with this Caramelized Onion and Sweet Potato Pizza. It’s perfect for this weird stage of December, when the holidays are over, yet you’re still on break (if you’re lucky!), creating your New Years Eve plans, considering your new resolutions, but still not ready to let go of some comfort food.
Pizza is always the ultimate win. Before we dive into this new pizza though: what are your pizza tendencies? Do you stick to your classics, or branch out? Do you have to have meat, or are you ok with that vegetarian/flexitarian life? And what about sauce? If you think you gotta have red sauce, meat, and the classic combos to make a delicious pizza, I’m begging you to give this one a try.
If you love to branch out, don’t care about meat, and are ok without a traditional marinara on your pizza, then you’ve come to the right place my friend. Caramelized Onion and Sweet Potato Pizza is heavenly.
First off, we have homemade pizza crust. You cannot go wrong with homemade crust, but if you’re in a time crunch, I totally support your use of a store bought one. You’re still mostly homemade at the point, and still kicking butt and taking names. (Did I really just say butt on my food blog? I’m rollin’ with it…).
So the “sauce” is a light spread of olive oil and minced garlic, topped with fresh thyme. Loads of thyme. The only way to go. Then on goes a thin layer of sweet potatoes. And these thin sweet potatoes turn into an uber creamy layer of the pizza, kind of like a sauce. Stick with me here.
Next on is the caramelized onion. Oh the sweet, savory, yummtastic caramelized onions. Need I say more?
And then… GRUYERE! Because if you guys know anything about me, you know how much I love gruyere. I mean, if there is a cheese needed, I call in gruyere.

Creamy, nutty, sweet, and salty gruyere packs the punch that this pizza needs, while also balancing it out at the same time. How perfect is that?
The best way to find balance while eating pizza? Top it with some arugula and call it a day! A balsamic vinegar reduction rounds it all out with those slightly sweet, savory flavors. So drizzle on that balsamic vinegar reduction after that warm, cheesy pizza comes out of the oven, and away you go!

Description
This pizza is at an all time savory level, with a hint of sweet with caramelized onions, sweet potatoes, thyme, lots of gruyere cheese, and a top of arugula and balsamic vinegar reduction!
Ingredients
- 1 homemade pizza crust
- 2 Tablespoons olive oil
- 1 medium yellow onion, thinly sliced
- 1 Tablespoon vegetable stock or water
- 1 1/2 Tablespoons olive oil
- 3 garlic cloves, minced
- 1 Tablespoon fresh thyme, chopped
- 1 small/medium sweet potato, thinly sliced
- 6 ounces gruyere, shredded
- 1 cup arugula
- 1/4 cup balsamic vinegar
Instructions
- Preheat oven to 450°F. Prepare homemade pizza crust according to the recipe, par-baking for 5 minutes. If using a pre-baked crust, prepare as directed.
- In a large skillet, heat olive oil over low-medium heat. Add sliced onions and cook for 15-20 minutes, only occasionally stirring, as they become golden. Add 1 Tablespoon stock/water/wine to deglaze pan and keep onions moist. Continue to cook for 10-15 minutes until onions are a deep golden. Remove from heat, set aside.
- Mix together olive oil and minced garlic; brush across prepared pizza crust (I also brush some of the oil on the crust). Sprinkle thyme evenly across.
- Layer sliced sweet potatoes across pizza, leaving an edge for the crust. Spread caramelized onions across the sweet potatoes. Add gruyere cheese evenly on top.
- Bake for 15-17 minutes until edges are golden brown and cheese is melted.
- As pizza bakes, place balsamic vinegar in a small sauce pan over medium heat. Bring to a low simmer for 10 minutes, until thick. Remove from heat.
- Once pizza is cooked, top with arugula and drizzle with balsamic reduction.
