Firecracker Shrimp here to blow your mind!

After what was the most gorgeous weekend in a looooong time (like, since last summer long), I sit here as huge lightning strikes brighten up the sky and thunder booms.  Which actually doesn’t bum me out too much, because I loooove thunderstorms.  Probably just as much as beautiful sunny weekends. There’s something about feeling all cozy inside, watching the rain fall and listening to the thunder roll in, that just fills my soul. 

But looking at these shrimp pictures makes me antsy for the sun to return out and for summer grilling to resume. C’mon, you know how it goes… summer is all about coming home after a long day, turning on the grill, making a super easy dinner – a’int nobody has time to slave in the kitchen when the sun is shining and there are only a finite amount of enjoyable days outside.  Amiright?!

Especially in Minnesota.

Firecracker Shrimp is one of my go-to summer dinners because it is so easy, so simple, and so quick! Not only that, it’s so dang flavorful and delicious! Soon to be your ultimate summer dinner-in-a-flash recipe, too.  You’re welcome.

First you’ll need to marinade the shrimp to make them all crack-a-lackin’ and fiery..you’ll need a little bit of…

…red pepper flakes

…fresh ginger

…garlic

…salt

…olive oil

Seriously, that’s IT!  Five ingredients.  FIVE.  I guess technically six if we’re going to include the shrimp. And I hardly count about 4 of them because they’ve gotta already be in that pantry of yours, my loyal FITK foodie friends.

So while you let the shrimp marinade (I really recommend at least 30 minutes!), play a game of bocce, cook up some coconut rice, make a mango salsa side, or pour yourself that much deserved glass of wine.

After the little shrimp have soaked up all the goodness, grill ‘em up and in no time dinner is served! I generally use a grill pan, mostly because of my apartment living life.  And let’s be honest, sometimes I’m just too lazy to go to the community grill. So regardless of your cooking method – grill, grill pan, saute pan – these juicy, flavorful, and spicy firecracker shrimp are going to be a summer game changer no doubt.  

Aside from mango salsa, pineapple salsa – or grilled pineapple – is amazing with Firecracker Shrimp.  Some Edamame Black Bean Salad would be killer with it, too!

Firecracker Shrimp


Description

Firecracker Shrimp! spicy, juicy shrimp grilled just the way you like it! Serve with pineapple salsa for a tropical, summertime meal that’s super easy!


Ingredients

  • 3/4 pound raw shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1 1/2 teaspoon red pepper flakes
  • 1 Tablespoon fresh ginger, minced
  • 4 garlic cloves, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper

Instructions

  1. Whisk together olive oil, red pepper flakes, ginger, garlic, salt, and pepper.  Toss with shrimp and let marinade for approximately 30 minutes in the fridge.
  2. Heat grill or grill pan on the stove over medium-high heat. Grease pan with a olive oil.  If desired, skewer shrimp before cooking.  Place shrimp on grill pan and cook for 2 1/2 minutes; flip and continue to cook for 2 1/2 additional minutes, just until translucent.
  3. Serve immediately with your sides of choice!
